Use _WIN32 instead of WIN32 to detect Windows
...
`WIN32` is not defined when building a 64-bit executable on Windows with Clang. `_WIN32` is the more appropriate option here.

Make libcanberra optional
...
It is the only X11 dep in RawTherapee, so here is an option to
compile without libcanberra. This will completely disables sounds
for long operations on Linux, but canberra is enabled by default.
